Most of the non-slip mats I can find out there are made of either PVC or vulcanized rubber. Can anyone point me in a direction where i might find floor coverings that are durable, non-stick and won't off-gass fumes of significant toxicity?

I'm not sure why you think PVC or vulcanized rubber off-gases "significantly toxic" fumes. Remember the first rule of toxicology: It's the dose that makes the poison. Botulinum toxin is a great example. In a can of food, you and the rest of your family are dead. In a smaller dose, you and your family's faces are wrinkle free for months.
