A good reference is Osprey Combat Aircraft no. 6: Junkers Ju 87 Stukageschwader of North Africa and the Mediterranean. There are a decent number of useful b/w photographs and a bunch of color plates.

The most likely camouflage scheme on Ju 87-B trops up to 1941 was the application of desert tan over the original 70/71 splinter scheme resulting in what looks like a dark green mottle over tan. RLM 79 Sand Yellow will do, although neither it nor RLM 80 Olive Green was officially introduced until late in 1941; there is evidence of a similar Italian Sand Yellow being used before that -- it's somewhat lighter and more yellow than 79. From the photos in the book, the application of Sand Yellow differed from plane to plane, so you've got a fair amount of leeway.

Yes, the Hasegawa kits are generally the best 1/48 scale Stukas available. Other choices are old Monogram (D/G), old Airfix (B/R), and Special Hobby (A).

Ah, I forgot about the Hobbycraft copy of the Monogram kit.
