I must be missing something here as I am picturing a cam like what would be on an engine camshaft. So, open a sketch, sketch the profile, and extrude as a solid. What am I missing?

No no no. CAM is my initials, so I know how to design one.
Draw a big oval shaped sphere thingy. Place a smaller one on top of it. Place (2) short fat tubular extrusions coming out the bottom, with (2) more coming out the sides of the big oval shaped sphere thingy. Make the material "Flubber". The smaller top section can be air. Your there...

Someplace I have an old Varpro-II or PEP (IIRC) routine from the days of CADDS-III in hardcopy format that does about anything one would wish for inre 2D CAM design .. the resultant spline could be extruded. I may feel motivated to look and copy it. Or may not. Someone else could translate it to whatever you need I expect, if so.
Why Not use Toolbox's cam creation tool? You will find it under the dropdown menu Toolbox --> Cams

Once upon a time we had to know what we were doing and why. Much, if not most, of what you do today is based on these things.
Use wrap sketch.
Use sheetmetal.
To get the curves into the sketch use your curve through xyz points and generate points in Xcel.
If someone wants to extract what I believe will be 'Apple Basic' code in there, Ill give a try to port to SWX .....
