noob Q: effect of + prop pitch on electric setup

factory config: 11oz parkflyer w/ speed 300 motor geared to an 8x4 slowfly prop, 800mah 7.4v 2 cell lipo and 8/15amp ESC.

what would the effect be of going to an 8x6 prop on this setup, all else unchanged?

You'd get a higher current drag, possibly more than the motor, battery or ESC could tolerate. You'd get more thrust at speed and possibly a higher speed. You _may_ get a higher thrust at takeoff, but you may also stall out enough of the prop that you wouldn't (I dunno what the rule of thumb is for the onset of prop stall with increasing pitch).

If you can, measure the motor's current draw at full throttle on the ground with the 8-6 prop. Check to see if that exceeds any ratings. If it doesn't -- go fly.

A bit more thrust, a hotter motor, a fair amount more current draw, possibly a higher top speed, and curiously, probably better cruise duration.
