p-51 nosedives at landing!

I have flown plenty of these ARFs and his problem is purely symptomatic of getting the plane too slow on approach. A couple clicks of throttle on approach should cure it barring the CG being too far forward.

True if you are talking general sport planes with semi symmetrical or flat bottom airfoils. Planes trimmed properly with symmetrical airfoils (such as the EZ P-51) will do this to a much less extent. A good pattern plane will do it very little.

A better idea would be to se where the model balances before flying, and make sure that the balance point is where the plans say it should be.

Doesn't sound right to me, since to be stable an airplane needs down force from the tail. If it flies level up right it woill need a lot of down elevator inverted.
