I am making some glass blowing irons with 310 heads and 316 tube shafts.

309L, 312, or 347.

309L is more common and will work fine.

347 can take more heat but is kind of rare. 312 is also rather rare.

Go for 309L. It is fairly easy to weld with and works well.
