You could easily build a level shifting interface, then use a logic analyser!

I assume you have a PC? Why not build a level converter, which would then allow you to feed the outputs into the d0 to d7 pins of the parallel port and grab 8 bits. Two ports would allow 16 bits. The maximum you could use is three ports.

All you need then is a simple bit of (B)basic programming to read the port(s) and display the data ether as ones and zeros or graphically.
