Not always true...if the surfaces are hydraulically driven it's correct to leave the controls centered in the cockpit. That's mostly true of jets, but some WWII aircraft as well (something like a P-38 springs to mind).

So you may or may not be "wrong" depending on the aircraft.

Sounds like an Aoshima kit.

I think it was, but that was back in my first incarnation as a builder (aka Merriman's "assembler") in the early to later 1960s.
