Is it just a surface or is on a solid?
Solid - just use Sketch text and extrude.
Surface - use Sketch text and extrude as a surface and use the trim feature (Mutual Trim) to trim away what you need.

If I understood you correctly, you want to color the inside of the letters, right ? Then use SW2004's "Wrap" feature with the the "Trace" option , which can wrap on cylinders of infinite radius = planes! This will generates edges along your letter's contours, delimiting faces that you can color individually...
FLAT surface, Philippe. Ummm . . . how about using Split Line? The kicker there is that you can only have one closed profile (one letter) at a time.

The problem is with coloring the letter surfaces in one operation, it's not possible that I know of? But what you can do is select "Edit color" and window select the letter surfaces and assign a color.
