Hi,
I'm a bit of a newbie to electric flight. Do all ESCs have a BEC for the receiver? Does the flight motor cut before the voltage gets too low for the receiver?

No and maybe. Gotta' read the specs on the speed control you are interested in, OR ask for the features you are looking for and let your LHS help you out.

Nearly all do have BECs, but not absolutely all. Particularly when you're talking way multiple cells.
Most heli flyers prefer to damage a battery pack than a helicopter -- so "helicopter" ESCs are much less likely to have low-voltage shut off, and many high-end ESCs have a shut off that can be disabled.
As Mr. Beck said: check the specifications.
Nearly all do. Big high voltage ones may not.
The voltage ALWAYS cuts before its unsafe for the electronics, exceptt when the BEC overheats and shuts the lot down in mid air.
It's a safety feature y'know ;-) You get a pristine un-destroyed ESC in the middle of a pile of smashed balsa instead.
