JR DS811 servos

I have experience with JR 8411 servos and they also have the trait you describe. According to JR, the tight deadband on their digital servos causes them to hunt for center when there is no load on them. The hunting normally goes away in flight, although over time and with wear, they will eventually need rebuilds. Go ahead and fly them.

Most digital servos will hum or have a high frequency buzz. In fact, I have some 8411 servos that move the control surfaces, especially the rudder back and forth. Once there is a load on the servo, it will stop.

All the digital servos I've tried (MPX, JR, Hitec, and a bunch of missile actuators with no brand name on them) have talked. I'm betting that you did not replace the servo with a Hitec digital - it would whine as much as any, but at a higher frequency. This sound is the song of low hysteresis. Learn to love it. Also learn to look for a stalled servo if it gets too quiet.
