Just trying to finish up this new plane. Some of my servos (more like all of them) seem to have too much load on them. They tend to all make that chattering noise at one extreme or the other (or in some cases both). I've tried a variety of things to make it easier so they wont make that noise but I'm not having any luck. I've heard if I leave them they will eventually die off quicker?

That chattering at one extreme or the other is the servo wanting to move the control more than the control can go. You can use shorter servo arms, or if the servo arm has serveral holes in it, move the linkage in one hole at a time. You can use longer control surface horns. Or if you're using a computer radio, you can program the servo travel limit. If you do nothing and frequently have to use the full range of that servo (control surface), then yes, the servo's life span will be shorter.
