Having a blue print with all dimensions of a residential building, is there a way or formula to calculate how many cables you would need for such building? Or is it a matter of guess? Example how many 14/2 cable you would need for your lighting circuits etc.

You start with the load based on 3va per square foot and then divide that equally across your general lighting circuits. Other provisions in the code like the bedroom AFCI will probably add a circuit or two to the general lighting circuits. You also have the required 20a kitchen (2), bathroom and laundry circuits. I wouldn't skimp on the general lighting circuits. A few bucks extra pre-drywall will avoid many hundreds of dollars later if you need more.
