As for the models, they are DB suburban cars in the FLE564x catalogue range but they seem to have the older type of fitment.

Maybe I'll have to do some slicing and dicing!

Unless you have bought coaches from the early eighties or earlier, all your models should have their couplers attached by snapping into a standard rectangular pocket. Roco fits Fleischmann and vice versa. Earlier Fleischmann had a coupler with a slit and pin which fitted a flat horizontal plate on the chassis.(warning, there is a flat sheet metal spring for centering behind the coupler) Roco (and Fleischmann) makes a suitable conversion shank with a vertical slot for a special coupler offered by Roco.

The coupler shank pokes right through the coupler box - you will see two wedge ends behind the box. Squeeze these gently with tweezers or fine needle nose pliers while gently pulling on the coupler with one hand and holding the coach with your third hand. ;-) The coupler should pop out.

I can find you cataloguen numbers when you decide which ones you want.

Thanks to both you and Nigel - on closer inspection the DB red coaches do indeed have the removable sort of coupler.

However the Silverfish which I obtained second-hand have fixed couplings so they will be more tricky.
