There are a gazillion different ways to design a load cell, so that's a hard question. Do you have more details like load magnitude? tension? compression? bending? static? dynamic? local environment? material?

Would just like to know more of the internal detail of pancake / donut type load cells and how to wire up eight internal gauges and where they are usually placed in these cells?

Exact configurations for commercial loadcells are usually proprietary information, but I'll bet you can get some clues here:
