I was taught to ball TIG electrodes by connecting the machine DCEP and using a block of copper. Can a block of brass or bronze be used similarly, or does it have to be metallic copper?

The problem is that bronze doesn't conduct nearly as well as copper and you could actually melt the surface.
I big block of clean aluminum would be OK.
You need something that will act as a big heat sink without melting.
On aluminum AC I get better results not balling the tungsten but instead sharpening them. If I'm using pure tungsten I'll leave the end a little rounded like a dull pencil. Best regards
agree completely...was trying them with a point, but quickly found the "dull pencil" worked best for me...
