Book on gelatin

Anyone knowing a recent book on gelatin (manufacturing, properties, uses)? I
have a photo copy of the book of Ward and Courts which is from 1977, and
wonder whether there is a newer book available (and NOT on the use of
gelatin in cooking!!!).
