Continuity, insulation resistance and breakdown voltage.
The insulation resistance/breakdown voltage might be a bit difficult to measure because the plug might 'fire' at the correct voltage, but discharge through a cracked insulator or carbon track. The proper breakdown test is probably partly visual (make sure the spark occurs at the correct place).
