I've heard similar horror stories before with 07.

Just for grins, I made a copy of a directory with an assembly of about 300 SW2006 parts. Then I opened the assembly in SW2007 and messed with stuff, but exited without saving. I was able to open the same assembly in SW2006 afterwards.

Could it be a new option (tick box somewhere) that SW2007 turnes on sometimes. I still get "single command per pick" turning on spontaneously since SW2004. They, SW, have a habit of enabling new "features" buy default on installation, even if they have the potential of F#%&ing someone up real bad. Typical shallow, myopic and RETARDED, idea from marketing.

There were two methods that I knew of to accidentally update parts (other than the obvious direct saving) with a newer version.

One that I found was that the new Pack & Go feature in SW2007 would not only save the P&G stuff but would also save the originals. If they were not protected, then they were updated. This was reportedly fixed in SP1.0.

The other, more common method, is to open some assy that is referencing parts from who knows where. When you save that assy, it also saves all the referenced parts, unless they are set to read-only. That's my practice for our library parts - they are all read-only and I have to make a concerted effort to turn that bit off to modify them.
