Does anyone know what kind of ejections seats are fitted in Switzerland's AF BAe Hawks (i.e. early or late style MB Mk 10s) ?

IIRC they are fitted with standard MK10 seats. If your choice is 1:72 scale, you'll find Swiss decals in the Italeri kit. Then, since the Italeri kit's nose is rather slim and more pointed than the true thing, a nose correction resin part is also available from Aviacolor, bundled with a Red Arrows smoke pod:
